Kary Lafleur, the owner of the company, grew up in the restaurant business, learning from his father, Archange Lafleur, who was a chef in the United States Army during World War II and ran the Pig Stand Restaurant in Ville Platte for three decades. Archange's Cajun-style bar-b-q sauce, made with ketchup, onions, and a variety of other ingredients, was a staple at the Pig Stand and has been manufactured since 1953.
In 1975, Archange had the idea of marketing a ready-made roux after customers repeatedly asked to buy small quantities from the restaurant.
